Cunsus records show father of Thomas Garrett to be William Garrett of Tennesee

Which William Garrett?  I am guessing he had Thomas at 20 to 30 years of age making him born somewhere between 1837 to 1847...

Thomas Garrett ( B. 2/8/1867- Tennesee-D. 8/19/1930, San Antonio, Bexar, Texas.  Husband of Gertrude Dunn and Father of Stephen Girard Garrett and Blinn Kimbrough Garrett.

Just to make sure I understand you, you're saying the link to the William mentioned above is not the correct William? The wife of the linked William above would have been born after your Thomas was born. In fact, her father was born after your Thomas so you must be using this as an example.

I've found some records you probably already have, but they don't have anything to do with the linked William on this page.

Thomas Garrett (age 12; TN/TN/TN) listed as a servant, living in the home of James (28;TN) and Mary (23; TN) McCart family including Zachary (3; TN) and Mary N. (1; TN)

I know the death record said Thomas' father was William, but neither father nor son ever show a middle name. What if it was William Thomas 1st and 2nd? The reason I say that is because of the below interesting information:

Emma Garrett (b. 15 Aug 1870; TN) Father's name: Thomas Garrett. Mother's name: unknown Kimbrough. Emma md. twice. 2nd husband George Washington Hornsby of Elmore Co., AL. She died there in 1951. She may have had a brother named Thomas who moved to Texas. [From Joseph D. Patrick http://genforum.genealogy.com/cgi-bin/pageload.cgi?Kimbrough::garrett::843.html ]

Emma Garrett (b. 1870; TN) moved to San Antonio, Texas. Went to Alabama as a widow on a visit sometime between 1900 and 1905. Married George Washington Hornsby of Elmore County, AL where she remained the rest of her life. Her father's name was Thomas and she had a brother named Thomas who had a child named Kimbrough.
