LNAB name incorrect, should be Punchardoun / Punchardon or Pynchard

I adopted this profile a few weeks ago but have spent more time working with his wife's family. Now I've found a couple sources that mention him [John]. He wasn't born with the name of Uly as that was the name of the manor his wife inherited in 1311. His son is called Pynchard on many modern family trees. However on two medieval sources the spelling of John's name is Punchardon or Punchardoun.

There is no mention of John having a title in these sources but Punchardon is an old name that goes back to 1066. Hoping someone can make a decision on the proper name to give John. 
 
Have more questions but will do one at a time.

I would spell it Punchardon.  Heaton Punchardon is a village in north Devon.  So I believe that to be the proper spelling.
