Initial search for his name: https://www.familysearch.org/search/record/results?facetType=ON&query=%2Bgivenname%3AGeorge~%20%2Bsurname%3AWilfong~&count=20&residence_place0=3 Brings up 15 records where residence is Canada, however all were born in Canada. You can also search by residence in the US which brings up over 1000 profiles - and filter from there. Unfortunately I don't see any that were born in North Carolina/Virginia and also counted in a Canadian census (residence Canada). Is it possible he was not born in either of those locations? Also, searching with a birth date or residence date range could help.
You might try Library and Archives Canada where you should be able to find which record sets are available in which time period. I am thinking maybe your George is a bit early to have much luck with census records.
