According to the Thomas Jefferson family tree in the Monticello museum, Ellen's middle name was "Wayles."

Thomas Jefferson's Family: A Genealogical Chart | Jefferson Quotes lists a number of "Ellen Wayles" -- born to Martha (Jefferson) Randolph, for instance, are Ellen Wayles (1794-) and Ellen Wayles (1796–1876). However, as to Ann Cary Randolph (1791–1826) we can discard the idea her daughter was named "Ellen Wayles", but rather was named "Ellen Monroe". Thomas (T.J. or Tj) Jefferson affirms this or someone in that family line.
