Joseph Hitchcock was born about 1759, the son of John and Mindwell (Rundel) Hitchcock, in Greenwich, Connecticut, where he would live his life.
On November 29, 1792, Joseph married Elizabeth Eddy, the daughter of John and Elizabeth (Brainerd) Eddy, in Connecticut.
Joseph and Elizabeth would have the following children:

Rufus Hitchcock (1787– )
Joseph Hitchcock (1789– )
Mahala Hitchcock (1791– )
Evidently Joseph was ill over an extended period of time since the townspeople in Greenwich appointed a committee to take care of his property. This went on until the committee was discharged in 1805, probably because Joseph's sons were old enough to care for the land themselves. On July 10, 1810, Joseph's oldest son Samuel was appointed administrator of Joseph's estate. Therefore, Joseph died at some point prior to July 10, 1810. He would have been around 51 years of age when he died. No burial record could be found.
