Joseph was born around 1824 -- he was 86 years old at the time of his death in 1910. The 1851 and 1861 censuses give ages that are less than 10 years apart. The handwriting in the 1851 census is very clear and we do not have images for 1861. It is quite possible that the indexing of the 1861 census is in error. 1871 gives his age as 43, agreeing generally with 1861.
1851 Canada Census
George Hutton appears first in a list of Huttons on page 80 of the 1851 Census. They may have all lived in one household, but the written record does not indicate one way or another. This Hutton group included:

Joseph Hutton, age 32, lived in George and Ann Hutton's household in Blanchard, Perth County, in what was called Canada West, which later became Ontario. The family's religion was reported as Congrationalist [Congregationalist], except for Willoughby who attended EP C of E [Episcopal] services. They lived in a two-story stone house.

1871 Canada Census
George Hutton, age 81, born in England, was head of a household in St. Marys, Ontario, in 1871. He stated his occupation as "Gentleman." Other members of the household were Ann, age 67, William V Hutton, age 45, Esquire, Joseph O Hutton, age 43, Gentleman, and Albert Hutton, age 36, Miller. All of the Huttons were born in England and their religion was Congregationalist. Also in the household (no break in numbering in original image) were Thomas Phillips, age 60, a surgeon, and Amelia Phillips, age 50. Both were from Ireland and members of the Church of England. [4]
