Also, Caspar's mother appears to be from Sahngen, but this is not a location I can place. Any ideas?

It's her maiden surname, not her birthplace, and the other Caspar is the godfather, not a grandfather:

9 October. Casparus, legitimate son of Wendelinus Hell local citizen and of Margaretha, born S?hnge? his wife. Godparent Casparus Engelmann.

(You missed the word Levante [godparent(s)] in your transcription.)
