How do I keep people from editing profiles that I'm currently working on?

I am working on revising a profile for a project. It is a profile which has lots of info and not many source citations.  The changes made were easy and I would have caught them when I finalized the profile I have notified the project that I am revising it and the person who made revisions also belongs to that project. When profiles are being edited/worked on by the England Orphan project the there is a "Please do not edit" warning placed on the profiles. Is there a similar warning label for other profiles that I am not aware of?

The short answer is that you can't. You can post a message on the profile asking other people to let you finish your work, but you can't enforce a no-editing policy.

Because WikiTree is a collaborative site, when someone adds something to a profile I manage, and if what is added is adequately sourced, I edit the contribution into the style I use on profiles, thank the contributor, and move on. I don't consider these "my" profiles, and I welcome the contributions of others.

Peggy, when I am doing a major overhaul on a profile on behalf of a project, I usually post a message (in bold print) right under the bio heading that states "This bio is currently being reconstructed, please excuse the temporary untidyness." So far that seems to do the trick.
