My maternal great grandfather was Joseph Hawkins who married Eliza Brown who gave birth to my Grandmother Elizabeth & her sister Rosanna, they lived in Toll End, Tipton, Staffordshire. According to the 1901 census Joseph is listed as born in Walsall but in Family Search there are two Joseph's listed one born 1865 & the other 1867. Can any member clarify which one is the father of the daughters.

Do you know who his mother was?

The five children, as per the 1901, and the 1911, census returns, all have the Mother's Maiden Surname as Brown :

Name: Mother's Maiden Surname:
HAWKINS, ELIZABETH     BROWN
GRO Reference: 1887  S Quarter in DUDLEY  Volume 06C  Page 38
HAWKINS, ROSANNA     BROWN
GRO Reference: 1889  M Quarter in DUDLEY  Volume 06C  Page 37
HAWKINS, JOSEPH     BROWN
GRO Reference: 1891  M Quarter in DUDLEY  Volume 06C  Page 34
HAWKINS, MAY     BROWN
GRO Reference: 1896  S Quarter in DUDLEY  Volume 06C  Page 34
HAWKINS, ELIZA     BROWN
GRO Reference: 1903  J Quarter in DUDLEY  Volume 06C  Page 46

There is a marriage for a Joseph Hawkins and an Eliza Brown Registration District: Dudley (which is where all the kids were registered) in the September Quarter 1887 (so July-August-September, although they may have married earlier than July and only had the marriage registered in the Sep Qtr) -- volume 6c, Page 119.

.

(There was also a marriage between a John Hawkins, and an Emma Brown, in the September Quarter 1886, registration district Stafford, so be wary of other children mother's last  name Brown in the same time frame.)

The 1911 census for your Joseph Hawkins specifies that he was born in Pleck, which is a ward of Walsall (link at ancestry.com). Will this be enough information to determine which one he is once you have their actual birth records?

O.k., I think I can answer that myself. The two baptismal records at familysearch.org are for baptisms in Wednesbury and in Longton. Now, Longton is now part of Stoke-on-Trent, which is at the other end of Staffordshire from Walsall. But Wednesbury adjoins the Pleck ward of Walsall. So I think it is a very good bet that the baptism in Wednesbury (with parents Samuel Hawkins and wife Emma) is for your Joseph.
