There certainly looks to be an Alice Roos who married Anthony. It says in History of Parliament Online that she was his second wife and her brother Peter Roos was the supervisor of his will " his will was proved on 12 Oct. 1575. His widow married Thomas Leke of Derbyshire".

There is a marriage to Thomas Leake 14 September ?1578? at Burton Joyce. The year is some time between 1575 and 1578. https://www.findmypast.co.uk/transcript?id=GBOR/PHILLIMORE-MARS/0470596/2
The entry in the FMP link is followed by a note "Among the burials in the year 1578, occurs the entry "Mrs Alice Stapleton the wyf (of) Mr Thom: Leake, ye 3io die January"".
I am no good at reading this writing but it might give husband’s name
