Which of the three Hatfield's was Alice Deerwalker's father ?

No idea where the “Deerwalker” name comes from.  It’s not in any records.  Her family lived briefly in the Chickasaw Nation in Indian Territory in between Missouri and Texas, but no one was Indian, they were all white.

Texas Death Certificate, Father listed  Daniel Hatfield, 1880

Census shows mothers first name Evalina.

More likely that Joseph Norman and Evalina Hatfield were her parents.  Father is listed as J.N., Joseph N., Norman, and is transcribed as “Jesse” in 1880.  She appears on the 1880 census with them in the same place she married in 1883.  She says on the 1900 census her parents were born in Tennessee and Indiana which agrees with the information on the1880 census.
