If you are unsure of the spelling of a last name do you use unknown?

Also if merged to unknown can you unmerge back to the profile that had the surname. The spelling at birth is unknown and the family uses 3 different spellings.  It was claimed he was born in Scotland so I would use the most common spelling used in Scotland for the name, which is the spelling used on the fathers birth and marriage.

No. You could use the earliest documented spelling.
You can’t unmerge, but you can change the LNAB to the spelling you have for father’s marriage and put other spellings in other last names. Much better than Unknown.
