How are witnesses chosen for a ‘Instrument of Sasine’?

 I found an  Instrument of Saine in favor of Alexander Campbell of the Lands of Octomore, dated April 1737, with a conveyance made at Octomore, Grimsa, Cultorsa, Lergba, and Gyllin. The following are listed as witnesses: Dugald McPhaden, Hugh and John McChristean, Alexander Muntgumery, son of George Muntgumery in Portnellan, Dugald Campbell, son of Archibald Campbell in Octomore. How are witnesses chosen? i.e. family, friends, or community status.
