Simply do not select either male, nor female -- and if it is on creating the profile, save anyway.

I would add to Melanie's comment that sooner or later someone is likely to come along and fix that oversight for you, so it might be worth adding a note of explanation at the top of the profile.

I haven't had anyone come along and assign male or female to a profile I deliberately created as neither - - but I have had the "suggestion" marked as a false error.

I didn't add a note to the profile of this baby, but the entire biography is just one paragraph, and includes the sentence :

There was no name, or sex, recorded, and the birth registration also doubles as a death registration.
