James, the best way to only enter some, but not all, information, is to do it by hand, rather than importing the individuals in a gedcom. Create the profile and add the information you want to be visible. You can also delete sensitive information that's been imported already.

As for father and mother missing on a profile but in your GED File. Look on your watchlist (Access watchlist under "My Wikitree" in the drop down menus right side top of page) for the missing parents. If they are there, it's easy to connect them, using their Wiki IDs in the edit tab.
