What are you trying to accomplish by removing a surname at birth?
I've traced the family tree correctly  to 1587 and am currently in the process of adding the names and dates with the sources.   The parentage of one individual was incorrect (early 1600s) but I tried to fix the problem by revising the existing parental information instead of adding a new person and then connecting the line to the new person.  A rooky mistake.  I ended up with a bit of a mess which, thankfully, is now fixed.  The original incorrect tree line is fixed with the appropriate people listed in the tree and our tree now has a person with an unknown name at birth listed as I was originally hoping to do.

The profile manager for that individual can edit the Last Name at Birth.  I don't think it can be removed, but the profile manager could list the Last Name at Birth as Unknown.

There would need to be a very good reason to edit a last name at birth to unknown - and supporting documents to show it could not be what it currently is.
My problem was solved as the project manager gave me permission to remove the "name at birth".  Originally the information added to the tree was taken from unreliable sources and I needed to correct the error.  I'm in the process now of adding documented information to our tree with sources included..
