Advice for categorization of Gattenhof-20?

I would like advice or may need help creating a new category for the profile of Christoph Gattenhof. The category might be named something like Rheingau, Eltville or Eltville, Hessen. I have categorized another relative, Kauter-71 Heinrich Kauter with an existing category Erbach, Hessen

Could I get help creating the new category? Or is there an existing category to use? Thank you!
