According to the notes on his Nosorigines profileLouis Cossette (abt. 1752 - 1826) was an adopted son of his parents attached here at Wikitree. Should they be changed to non-biological status? Also, should his LNAB be Unknown, CLN Cossette?

According to the info on Nos Origines web site, you are correct.

His marriage contract and the Will of his adoptive father need to be found and the sources for them attached to Louis' profile. Then the adjustments can be made in regards to parents attached.

found the listing of notary Charles Lévrard's acts, there is indeed a contract and testament for the family, Répertoire Charles Lévrard (membership IGD needed) the page is just the log of his acts so very little detail, but the word adopté shows on the testament item.
