How many generaton can go back on a printable tree?

It depends on settings of the software or website. Also you have to account for paper size, font size, and margin settings. It is helpful to see how it all fits by using Print Preview before printing. So if it cuts off any part of your chart. You can go in and adjust these settings.

Another thing to look at not only the type of chart you are printing but the information included. For some software will allow you to included what else you will like from your data into the chart.

Typically I would say anywhere from 4 to 5 generations would fit fine on 8x11 paper.

Lots of times I use a PDF and email to family members who request these charts. I do the same for my records.

I was comparing my printable family tree, against my sons family tree, and I noticed that on my sons tree it missed out a generation! is this a default setting for the Wikitree program, or can I adjust it to include the missing/s generations?

Checking the website to see what is the setting for a ancestry pedigree chart. It seems that it will only print 5 generations. It should look like the one on the family tree tap. 

In the help it says that the pedigree chart is optimized for printing. Which simply means adjusted to fit your paper when printed.
