What does "dit La Fleur" mean after Francois Pinsonneau's name?

A dit name is a name given to a person or family, kind of like a nickname. In this case, La Fleur means The Flower. "dit La Fleur" means "called the Flower".

Dit names sometimes become the last name of some or all of that person's descendants.

I'm not sure how good an explanation this really is... If you google "french dit names" you'll get lots of information.
