Should there be a category for indentured servants? Would that be a profession? Or would "Servant" be the right category? What would the hierarchy for naming the category.

There are many people I am working on in Maryland, for example, who indentured themselves to pay for sailing to America from England. it is not specific to immigration. An apprentice could also be indentured.

As you note, indentured servitude didn't necessarily make a person a "servant."

Karen,

Read through these Category FAQ's.

If you find a compelling reason to create such a Category, then create it.  Ask yourself what the purpose of the Category is and ask the question again with your specific goal in mind.  You may find others who agree and would find it useful.
