Just to confirm Henry's details I located his birth (to Samuel Coxon & Jane Salkeld) & some other data which are copied in following comments.

However, I'm afraid that I've had no luck locating a definitive death record, but I've found a lot of other information which you may be able to leverage to find people that have located useful records.  It appears that given the birth of the last child (Fred Salkeld Coxon) was registered in Q1,1885 (Gateshead, V: 10a, P: 814) Henry must have died between Q1,1884 and Q3,1891 (census) and his wife just chose to never describe herself as a widow?
The only death record that even comes close, appears to be in Q4,1883 in Burton on Trent but why would Henry be in Derbyshire / Staffordshire? (http://www.freebmd.org.uk/cgi/search.pl)...
COXON, Henry AaD:39 Burton On Trent Vol: 6b, Page: 258
According to information in the London Gazette Oct 19th 1883 (http://www.london-gazette.co.uk/issues/25280/pages/5013/page.pdf), Henry became a coal merchant & cartman (H.S. Coxon & Company) after being an innkeeper in 1881 but the business/partnership was disolved on 15th Oct 1883 not long after another coal related business he was involved in had folded (http://www.dmm.org.uk/news18/8830807.htm).
Interestingly Elizabeth Coxon (nee Leybourn) declared herself bankrupt in 1888 (http://www.edinburgh-gazette.co.uk/issues/9977/pages/888/page.pdf)
Ancestry24.com (south african website) has a couple of trees that mention Henry but the site requires payment for access.  However you may be able to find other references to the tree owner "mamgu71" online.

NB For some reason this person does not have the two youngest sons Samuel & Fred.  This person may be able to assist you further... (email address:  jackdryden AT talktalk DOT net )
Hope that some of this is useful.  Good Luck, Mark.
