How/why or what is the purpose of having the marriage of a couple but no parents or children listed?

It looks like the Profile Manager uploaded a ged.com with limited information and they never did any further work on the couple.  This is unfortunately common with ged.coms.

I'm not sure what you're really asking.  Lots of time a couple are found in a source, say a census, and that's all the information you've come across.  Why not enter them so that others can try to connect them at a later point?  And some times one of them may be identified as the brother or sister in law of a person you are related to and you might need them, even if you might not yet have any other information on them.

Welcome to WikiTree! I hope you find it as interesting as I do to contribute to the growth of our tree.

The short answer is that probably no one has yet taken the time to add the children, or done the research needed to determine who they are. Or they might be a childless couple. For long-time genealogists, the marriage itself is important as part of the life story of two people.

Those who work on WikiTree for any length of time know that the tree is a work in progress -- we'll never be "finished" with it. An example: as part of a one-name study, I have created over 300 new profiles, and I'm still not done. My starting point was a particular immigrant to America who arrived pre-Revolutionary War. Profiles for him, his wife & children already existed, but profiles for the descendants of several of those children had not yet been created. His oldest son still has just a wife & no children -- I haven't worked on that branch yet, but I know from searching for other family members that he had a host of descendants.

In my main area of research, towards the end of published material, dates of available events can vary quite a bit due to legal requirements: a church book can only be published once the last, newest entry is past the date of privacy protection. That can mean that birth dates may end in let's say 1895, but marriage dates may be available until 1927. If I'm documenting the descendants of one person I will obviously find sources for marriages for times when births are not yet published. But somebody else can come along and have the data to connect to these couples and that's why I put them there for others to find.
