I have many English Quaker forbears associated with monthly meetings in Durham, Yorkshire and Surrey

I am attempting to categorise my English Quaker forebears, but the monthly meetings they were associated with are not included in the list provided

When I attempted to add the Raby monthly meeting in Durham the Category was shown in red, so not accepted

I understand that one is not supposed to use high level categories for individuals, so presumably it is Ok to use the Category: English Quakers, when the monthly meeting they attended is not on the accepted list?

Steven, when you add a category name to a profile and it shows in red, it means that it doesn't exist (not that it's unacceptable).  If/once you create the category, the red will vanish.  I do recommend, however, that you discuss with the Quakers Project http://www.wikitree.com/wiki/Project:Quakers before creating categories just to get their input/comments.
