where are the Edit Changes Privacy sections of the text on the Profile Pages?

You need to select the Privacy tab on the Profile (Not the display of the existing privacy at the upper right.  You can only select an overall privacy level for a given profile.  I.e. you can't select just making different parts of the profile at different levels.  The degree of what appears to the member not on your trusted list have been selected to meet different requirements.  So read the descriptions of the various available levels carefully to be sure you've made the correct choice for each profile.  I personally, tend to make profiles as open as I can.  Some selections aren't allowed, like living people not being able to be open.  And members can't be totally hidden since other members need to be able to communicate with them.  Likewise people dead for 200 years must be open, though this is sometimes abrogated because of project protection.

As far as I know profiles over 200 years old are open whether or not they are project protected.  Project protection keeps changes such as LNAB and parents, etc. from getting changed while encouraging discussion of anticipated edits.
