Changing parents of adopted children

One of the profiles that I recently adopted is that of Minnie Gatlin, the daughter of my 3rd-great-grandfather's brother John G. Gatlin. John and his wife adopted Minnie when she was two years old. I know her birth name and the name of her biological father. I added a note about her adoption on her profile, and changed the relationship between her and her parents to "non-biological." Is it best for me to just create a profile for her biological father, and change her name? I'm pretty new here, so I'm not sure what the procedure is for changing a birth name.

For profiles this old, I would recommend that biological parents be attached and adopted parents linked to in the bio. There is no one living to get upset about "my real parents are those who raised me" and accuracy in family/genetic relations seems more important for the older profiles.
