How to order a childrens (or spouse) list in a specified order when no dates are specified ?

you can't add the children without a birthdate so they will be in order, surely? Spouses, now that's different, If you think they came in a certain order but you have no specific dates, you can always add a date that is approximate, based on what you know about the person or tick "before this date" and use the date of the eldest child's birth as a guide until you can find a source. Or you could just leave it blank for now and try to find a source for them.

Is there a way to reorder a list regardless of date field value ?

For consistency and verification reasons I like to keep the same descendants order as my family tree documents from 4 generations back when birth dates were non-existent.
I'm fairly certain that there is no way to reorder them. Try entering them in the order you want them. They may automatically order by ID but I'm not sure.
Anne is correct. There isn't a way to order them without entering dates.

It could be explained in the bio.
This is one of the many reasons why the bio is important.
An index field would be nice. Besides explicitly keeping certain lists sorted, another use could be an auto-commenting feature in the bio such as : xxx is the 3rd son of yyy. But it has to be thought thru for multiple marriages etc.
Use estimated birth dates.  If they were close in age, choose the oldest or the one in your direct line.  Add the estimated birth date.  Add or subtract the estimated date for each of the other profiles so they fall in line.
