Could the name Redmon also show up as 'Redman' and 'Redmond' on census & other reports?

I'm searching for any info on Lewis Redmond (shows up as Redman, and Redmon) born around 1842 in Mississippi. He is listed as Black or Negro but family says he was possibly Choctaw or other Native American. He married Amanda "Mandy" Page. Had a daughter Janie.

His name could show as Mary Beth.  With all the sloppy handwriting, poor transcriptions and the original bad pronunciation, poorly educated enumerators, misinformed providers of information, anything is possible.  Kudos when it is all correct!  :)
As Vincent says, variant spellings like the ones you describe are extremely common -- and much weirder interpretations show up at times.

I had the same problem with my Redman, Roadman, Rodman ancestors. I was also told that we are Indian of Cherokee. Certainly my line had olive skin & could also be mixed. I am proud of my DNA regardless!  Lol. Same also with Spielman, Speelman, Spealman ancestors.
I've had the same issue with my Murdock ancestors. At times they are called Mirdock, Murdick. Marduck, etc. And first names are misspelled, etc. And at such times I feel life is easy, but when the Census taker gives that Murdock a different birthplace than the one of which I was aware, and all of the other Census records each do their own thing, Gosh, I want to go back in time and help them.

Census Law changed (laws pertaining to how one conducts the Census) many times over the last couple of centuries, so the person may--at times be talking to a kid who has no clue, or to a servant/daily worker on a farm (who does not really know but wishes to be helpful).

I found a Lewis Jefferson Redmon born 1842 died 30 Aug. 1904 He is buried in the Eminence Cemetery Covington Co. Mississippi. His find a grave memorial # is 18351349. let me know if this is any help. If not, I will be glad to take another look. Nancy

I'm not sure exactly. I've seen on familysearch.org his marriage report to Amanda Page, but that's not listed on the gravestone. Also, I think I may have thought he was in the confederate army, too. I know him and Amanda were together their entire lives. They had 4 sons and 8 daughters. Thank you for your help!

Have you looked at any of the resources on the Choctaw Nation Project page? http://www.wikitree.com/wiki/Project:Choctaw_Nation

Redman, Redmon and Redmond are surnames listed in the Choctaw surname archives at Rootsweb.   Might be worth checking there.
