It would take either a major change in what the language options mean and are used for, or for FamilySearch to support other languages.
Right now, the language option is just to indicate what language you want automatic place name suggestions to occur in - and FamilySearch only supports "a couple dozen modern languages". It's not really meant to indicate what primary language the person in the profile spoke (and would be a bad way to do it; many people speak multiple languages and it would be unhelpful to force a single choice).
I think it would probably be nicer if the language field was better named to be "place name suggestion language", but it's the way it is in case of future expansion of the field, I think.
