I don't see mch information in the profile so it's sort of hard to check things out. Normally church death records are quite acurate, but you have to look at the era as well. For instance lets play this out.

Susan Relative) Aunt susan died

Record Keeper) Ok when

Susan Relative) Oh about three weeks ago. We burried her in the family plot.

Record Keeper) Ok let me jot that down.... *spills ink well* oh I much clean this up

Susan Relative) Have a lovely evening

Record Keeper) *Cleans the mess up* *has a few brews and food for dinner and comes back to write journal entries down* Susannah Matheny ...... *hurmmm how long ago did she say...??... Was it years or months... Years it is then..

 

Now I know that it totally off the wall and they were really great at keeping records, but you have to think that they probably had their fair share of slackers as well. Now there are a lot of other posibilities as well....

Church fire and all records were reconstructed from memory of relatives... AND WE ALL KNOW HOW RELIABLE OUR RELATIVES RECOLLECTION OF EVENTS ARE!

Wrong Person or Relative with exact name. This happens IE: Mother and Daughter confusion on records.. I'm sure some of us have had that.

Incorrect Source Information The source you used for the information fat fingered the date or even put the wrong info in all together.

Sloppy Record Keeper The person who wrote the info down in the first place had really bad writing skills. I can attest to some truely horrid penmanship while scouring through German records in Munich.

In all... Without a little more information it's hard to say what happened or whats wrong. Just going through my database I found three Susannah Matheny's withen 75 years backwards or forewards from your posted death date.

Susannah L. Matheny 1671-????

Susannah ?. Matheny D:1693

Susannah M.                 D:1600's ?

 

If you can toss me some more info maybe I can help out a bit more.

First husband Solomon Day died c. 1687; Susannah credited with at least 3 children, William, Thomas, John. b. 1690s with 2d husband Davis.

Because she did not die in 1687.  She was alive and well in September 1691 when she was mentioned in a court record with regard to a piece of land that her late Husband (Soloman Day) and her father (Daniel Mathena) had purchased named Hope Plantation - this document also mentions her current husband, John Davis.  A family researcher referred to this Susannah as Susannah Wyatt until finding a family Bible.  Upon finding the family Bible, Susannah Wyatt changed to Susannah Day and thus Susannah Matheny.  The son that we descend from is William, if accurate, Susannah did not die before 1711.
