What to Call Utah between 1849-1850?

Soooo.  I am working on adding all 29 children for my polygamist 3rd great grandfather who had 3 wives.  His children were born starting from 1849  in Salt Lake City--what is now known as Utah.  His three children before this were born in Iowa.  From September 9, 1850 until January 4 1896 Utah was called Territory of Utah.  

But from 1849 until Sep 1950, a provisional State of Deseret was created by LDS settlers.  It was never recognized as a state.  

So my question is, during this time 1849-1850--what should Utah be called?  Before this time, the area was owned by Mexico I believe.

I usually call it Deseret if they were Mormon. I've seen people born during that time that have Deseret listed as their birthplace in the US census.

Honestly, this is the first time I have come across the name.  WikiTree is teaching me to be more exact and accurate with my information :-)

There are still traces of Deseret in Utah today -- the 2nd largest newspaper in Utah is the Deseret News, and the Utah state flag has the Deseret beehive on it.

We have a chain of thrift stores here owned by the LDS church called Deseret.  Now I know why!
