[Sources Needed] Who was Esther/Hester Simmons?

I found her marriage record to Peter (born Petrus) York. I know based off of DNA and the timeline involved she is my ancestor. But I cannot find record of her birth, her parents or who they might be, any previous marriages or later ones, or her death.

Only Ancestry, with its plentiful unsourced trees, has a family for her... that I know is wrong because every other tree with the same records has that Esther Simmons in the Carolinas.

She married Peter York in 1808 in Ulster County, New York, so I'm guessing (read: hoping) she was 15 or older at the time of her marriage... so I'm guessing she was born 1793 or earlier.

Thank you for a source on her being the mother of another child, one of which is listed in her husband's will. I was hoping for information regarding her parents, her birth, her death, prior marriages, or later marriages. Still, thank you for this record. It's good to have a source for another child of hers.
My 2nd great grandfather was christened in another Dutch Reformed Church of Kinderhook, New York as were two of his siblings. That church had extensive baptism records. Maybe the church where the younger Peter York was baptised, would have records of another sibling or other siblings.
