How is it my own profile refuses to allow me to show my late wife as my spouse?

there isn't any reason that it shouldn't. Assuming you have created the profile for your wife. Close both memorials. Open yours or hers and try again. Go to add spouse and just enter the Wikitree-ID. (don't know what the Wikitree-ID is? Look where the red arrows are

I think (not positive) that the privacy level for your wife's profile (or the interaction of your privacy level and hers) prevents her being displayed as your spouse on your profile (you may have noticed that you are not displayed as her spouse on her profile either).

When I look at your family tree I see your wife listed, and I can go to her profile (where her husband - you - is listed as "private" - perhaps this is why she is not shown in your profile?) - Moses-1982,
