Why does it seem that so much of our genealogy points to the Mayflower?

Possibly because there are more US members of Wikitree than other nationalities.

Absolutely agree with Lynda. None of my family (except myself) are in the US. And even my husband, with deep roots in the Colonial South, doesn't go back to the Mayflower but does go back to the Jamestown settlements.
