Hi Marie, Thanks for the details.
I don't know if I have the wrong Grace Bursing or what, but all the census records I found for her say both her parents were born in Germany. This leads me to believe her Last Name at Birth may not have been Baldwin. She was apparently first generation American.

I was not able to connect her to the Isaac Baldwins. https://www.wikitree.com/wiki/Baldwin-9907
Grace married George in 1902. I wonder if this is her in the 1900 census with her parents as Grace Poppingo.
"United States Census, 1900," database with images, FamilySearch(https://familysearch.org/ark:/61903/1:1:M92G-QHN : accessed 22 February 2018), Grace Poppingo in household of John Poppingo, Allison & Riverside Townships Rock Rapids town (pt.), Lyon, Iowa, United States; citing enumeration district (ED) 51, sheet 5B, family 88, NARA microfilm publication T623 (Washington, D.C.: National Archives and Records Administration, 1972.); FHL microfilm 1,240,445.
Edit: Actually I am pretty sure that is Grace that married George Bursing. The 1900, 1905 and 1910 census are all for Rock River/Riverside Township. I think her maiden name was Poppingo.
What was your source for the Last Name at Birth of Baldwin?
Bingo! Found her marriage record: "Iowa, County Marriages, 1838-1934," database, FamilySearch(https://familysearch.org/ark:/61903/1:1:XJX9-WJL : 10 February 2018), George Bursing and Grace Poppingo, 12 Nov 1902, Iowa, United States; citing reference 148, county courthouses, Iowa; FHL microfilm 1,434,690.
