How does the new  GDPR rules affect Wikitree?  Will it mean we have to remove are profiles, or can we still keep using Wikitree?

You can continue to use Wikitree. Here is a link to the GDPR FAQ which explains what actions Wikitree has taken to comply with the new privacy legistlation.
