I have a person set to Private because she is still living; however, I did a Google search on her name, and the Wikitree bio area on her page, where I had placed birthdates of her children to add later, showed up. So in reality, the information is not private at all, just private to those coming to the site...am I right? Does this also happen if we place information in the notes section?

I just logged out of WikiTree, and searched for my (living) aunt, who has been made Unlisted.

I couldn't even find her name on Google.  Nor even by her maiden name as well as her married name.

My guess is that you were still logged-in on WikiTree when you searched, so when you clicked on the Google search results, of course you saw everything.

Try logging out of WikiTree, then search for that living person again.

I'm wondering WHEN was the profile created? Becasue of that info was on the profile BEFORE they went unlisted then it would have been readily available.

I'd like to know if Google can NO LONGER pick up any details from unlisted profiles from now on!!

Google caches many search results, so some data is still showing up from prior to the big GDPR transition, but today I find that there are fewer now-private results on Google than I saw a day or two ago.
Good!!  So going Unlisted does work
