John (Burbege) Semonis: a brick wall

I've got the middle name in () because I'm not sure it's correct. I havent created the profile yet. I'm far behind on my wife's lines. Hoping for help before creating the profile. According to the 1880 census of Mercer County, Kentucky, John was about 80 years old. his birth place indicated as Virginia.

There are a crowd of children. The line descends through Rachel Paralee, b. 17 May 1850, d. aft. 1882. She was the wife of Daniel Carey, a descendant of Johy Cary of Somerset, England (b. about 1610) and Bridgewater, Massachusetts (d. 31 Oct 1681)

It's an unusual surname, Semonis. I haven't come across it elsewhere, but then again, I've focused more on my lines than my wife's. I don't know of any varients yet. I'm getting less and less trusting of Ancestry trees.

Any help would be greatly appreciated!

The issue is that the original last name probably had a different spelling. I did find this:

It could have originally been simon.
