Will dna test of me ,male, show the heritage or nationality of my mothers father, my maternal grandfathed

The heritage information will not be specific to either side. It is a blend of both of your parents. It can't give a nationality, just what largely regional markers are present. So, it might indicate British Isles, Western European or some other areas in differing percentages. This is assuming an autosomal DNA test. A Y DNA test wouldn't indicate anything from your mother's side.

If you take an autosomal DNA test then any DNA you have inherited from your maternal grandfather will impact on your ethnicity estimates, as will DNA you have inherited from all other ancestral lines.
