Whatever person named a Mexican restaurant Quixote must (A) know nothing about Mexico (B) know nothing about Don Quixote (C) know nothing about Spain (D) know nothing about food.  Sort of like calling a steak house [Mahatma] Gandhi. I would wonder if Cervantes even ever tasted corn.

I'm in Spain.  I wish I knew where to find some Mexican food as it certainly ain't here!  Or ever was.  :)
I guess that restaurant owner was tilting at a windmill.  Come to think of it, aren't windmills in your other home, Vincent, and not in Spain?
I did think a Mexican restaurant named Quixote's was weird. That's why I kind of wanted to check it out. =) Maybe the owner was trying to be ironic? I have no clue.
Mexican owner (for sure), Mexican staff (as far as I can tell). My American-Mexican wife has never commented on the incongruency. I guess he was just celebrating his heritage. No matter. It’s a very popular place. Don’t have the typical menu with 1,374,958 choices on it.
