What is a good resource for finding family in Bavaria, Germany?

My wife and her family are from Southern Germany (Bavaria), town of Ulm.  However, we have little to no information about her grandparents, especially on her father's side.  So I'm trying to find a good website or resource to contact to find more info.

I have found the following site quite useful < http://gedbas.genealogy.net/ > particularly if you have a little knowledge of German geography and can tell if the birth/death locations are in the area you want.

familysearch.org wiki always has good information

https://familysearch.org/learn/wiki/en/Bayern_(Bavaria)_%E2%80%93_K%C3%B6nigreich_(kingdom)

but Germany is tough because they are restrictive about giveing out information sometimes. When you go there, go to the town hall, they are usually quote helpful. I found some wonderful town census records for my family when I visited Regensburg
