How do I indicate DNA confirmed grandparent but unknown parent?

When I took my AncestryDNA test, I was quite surprised when I had no close DNA matches to anyone with my surname despite my documented grandfather being one of 12 children.

My father is DNA Confirmed because I have matches through my paternal grandmother. I have four 1st-2nd cousin range matches with people who have a DNA Confirmed relationship with [[Dockery-557|Dock Dockery]] as their grandfather or great-grandfather and many more DNA Confirmed 4th cousins or closer. Dock Dockery has three DNA Confirmed sons. After much emailing back and forth about locations and timelines and comparing all the matches, I am confident that Albert Dockery is my DNA Confirmed biological grandfather. His granddaughter is my closest match. 

(Predicted relationship reported by AncestryDNA: Second Cousin based on sharing 541 centimorgans shared across 27 DNA segments; Confidence: Extremely High.) The 2nd cousin prediction makes sense because we only share one grandparent instead of two.

During my research into the Dockery tree, I kept finding matches with the same common ancestor. August Staggers b. abt 1820. Dock Dockery's mother is also known as Louisa Steeger/Steger. In the 1880 Census, Dock even listed as Dock Steger. 

I feel confident that Dock's father is an unknown son of August Staggers, making August Stagger my 3x great-grandfather!!! Given his age and the lack records before 1870, August Staggers likely has several children that are lost to history. I have seven 4th cousin or closer DNA matches with Confirmed DNA relationships to August Staggers, who also match the descendants of Dock Dockery. Assuming I have the correct relationship to August, my closest match would be my 2nd cousin 2x removed (Predicted relationship reported by AncestryDNA: Fourth Cousin based on sharing 66 centimorgans shared across 4 DNA segments; Confidence: Extremely High.)

Should I list Dock Dockery's father as Unknown Staggers? Do I have enough triangulated evidence list August Staggers as a DNA Confirmed ancestor of Dock Dockery and Unknown Staggers?

I would create the unknown Staggers in your tree, certainly. Make sure you include your analysis in the notes.

I have a similar situation in my family tree, where I have a huge DNA network to support a relationship but am missing a generation (or two) in my tree. However, I believe it's important to represent the connection for other researchers.

As for marking it confirmed, if your relationship with the other descendants of August is further than 3rd cousins (including removes) then the Wikitree rules state you need triangulation on common segments of DNA to use "confirmed". However, don't get too hung up if you don't have that - it's ridiculously rare - simply mark it as confident and make some notes about your DNA network.

Please read this statement in the DNA Confirmation instructions: The relationship status of a parent should not be marked "confirmed with DNA" unless you have supplied sourced documentation for the complete ancestral lineage to each of the test takers from their Most Recent Common Ancestor (MRCA). What this means is that if you have an 'unknown' person in the lineage of either test taker, you cannot use those matching DNA tests to mark any relationships 'confirmed with DNA'.
