Figuring out adoptions from Early/Mid 1800's

So I am finding comments here and there on multiple different sites that the children of Ebenezer Kelsey (Kelsey-1580) and Mary Nye (Nye-1720), my 4x great grandparents, that their children were adopted (at least 3 of them) 

I have not added any of the children on WikiTree (except whom I've descended from) yet as I'm still trying to figure this out. As a newer person to doing research I have ZERO idea on how to find adoption information, especially from so long ago. 

Anyone have any ideas? Thanks for your help, I'd like to unlock this story.

In many areas early orphans,were awarded too a family,and were

identified as Wards of the Court.

Guardianship records can be very helpful.  When starting out i found children in census with families who were relatives but not biological children by happening upon guardianship records after looking at probate records.  In one case the children did  petition to Have their guardians changed!  They had lived with one family for a few years, then changed guardians.

Oh that is interesting, they do come up on several census records but no indication of guardianship. I'll have to look deeper at probate records, most are hard to read though. :(
Karen - Yes, probate records can be hard to read. I've been looking at both land and probate records in New York. They aren't indexed but familysearch does have images and the images usually include images of the index books. So far I have discovered that different NY counties use different ways of indexing, but once you have that figured out it helps. I've also learned that some images are multiple books, so you have to be sure to check each volume. One neat thing, however, is that once you find the image, there is a button to cite the source which copies it to the clipboard for easy paste into the profile.
