I'm not sure what you mean by deleting the email account for WikiTree. If you remove your email account from your profile it will deactivate your account and you can no longer log in. That does not appear to be happening here.
Do you mean you deleted the actual email account and no longer have access to it? If that's the case, simply change the email address on your profile's edit page to your new email. You will receive a confirmation email at the new address.
