Should I add parents names if I have no other information on them?

I have an image copy of the marriage record with the parents names but I can't find any information on the parents including mother's maiden name.

Melissa, if the parents names are on the marriage certificate then that can be used as the source for the parents profiles. The mother would have a Last Name At Birth of 'Unknown' until you discover what it is. I would put a full source citation on Carri and Josephs profiles first.
This is what I would do. Sometimes the marriage record will give the maiden names of the mother’s, so you don’t have to use “unknown.” The marriage record is the source for the marriage of the couple, and the source for the names of the parents. If the ages of the bride and groom are  given, you can estimate when the parents were married. My genealogy software allows the use of words like about (abt), before (bef) or estimated (est), and others, with dates which makes estimated dates clear. The convention I use is that abt refers to a date based on another date (age 20 in the 1940 census means born abt 1920).

I always put the parents names in the Bio, even if I don't have any other info on them.  In your case you probably don't have the dates or places but you can estimate / guess when they were born and then enter them and guess where they were born.  Yes there may be a few times you'll need to go back and write a research note, but normally you'll find a source or several if you make reasonable guesses.  I generally make the mother 4 years younger than the father and pick the father at say 29 years old.  If you can't find a suitable source with those dates, go back and change the ages to about 5 years younger and if that doesn't work, try five years older.  If that doesn't work either, then give up for the time being and change the dates back and write a research note.

If you have a source that names the parents, you can mention it in the bio of the child.

If the sources is fir the parents, but you are not ready to begin a profile for them create a Research Notes  area just above sources line, and whatever you find can be held there to you are ready to use them
