ancestor changed surname from devos to davis

my great grandfather is listed as dutch on 1901 census canada but may have been devos .william davis  1843-1912. wife johanna russell[ rossel ? ] he was a sea captain

Generally we use the earliest surname that comes up in official documents. If there's a birth certificate that says Devos, use that. You can always enter Davis in the Other Last Names box if he changed it.

It's more than likely DeVos anyhow. I have a Belgian friend with that surname.
