I would like to get beyond my paternal 3rd great grandfather, Adam Hay-1323, but it seems I'm at a dead end.

I have found only two records for Adam Hay-1323. A proclamation of marriage in Abbey Paisley, Scotland (his Parish) and another in Neilston, his wife's parish. Both have the same date, 5 Jun 1790.

The other record for him I found in a Lair Book when I visited the church where he is buried (d.1825). The records mention his son, a daughter, and a grandson, but nothing on his parents.

I wonder if he had any younger siblings? Where were his parents from? What records might be of help?

Not unusual to have marriage recorded in both parishes.

Looking on findmypast there are a number of marriages of a Adam Hay, but no birth or death records.

By the way Abbey Paisley is a place.

Tag the question with "Scotland" and "Paisley."  There are probably Wikitreers who are proficient in Scottish records--like census or locating death records.

I have Adam Hay son of Adam Hay on a collateral line, but they were all from Glenbucket, Aberdeenshire.

I believe familysearch has your Adam Hay, but with an incorrect birth place (Edinburgh), as that appears to match the Adam Hay who married Mary Watson in Edinburgh on 27/05/1790.

Have you considered looking older .. and farther afield .. for your guy?  It was not unusual for a man to marry when he was in his 40s or 50s and there was (according to Scotland's People) an Adam Hay born about 1758.
