Managing an account for a person that has died.

I manage Ray-5844 under one of my email addresses.  This person has recently passed away.  I don't want to lose the connections and DNA notes.  Is there some action I should take for his account so that he is no longer listed as a manager?

"Removing his emal address from his profile" is just like if he were closing his WikiTree account, see "Option Two" here:

Cathi, I'm sorry for your loss.  You need to write to info @ wikitree.com (without the spaces) and tell them.  If you just remove his email address, that's not a good idea because it will leave all his profiles in limbo somewhere - I don't know if he'd be removed as manager of them and if there are any private or living profiles they need special attention.  They will also place a sticker on his profile, honoring him as a former member.

Since you are already also a Manager of his profile, you should be able to simply remove his email address from his profile.
