I've never seen the last name Albert in an Acadian record.

Could you be more specific, perhaps linking to a particular person?

I've heard the name growing up in New Brunswick, so I image present day Alberts in that area would consider themselves Acadian, I'm just not sure where exactly their ancestors came from.

Like Lianne said, more info might help.
My records show that my ancestor Pierre Albert was born in Poitou, France, in 1672. He came to Quebec around 1700, married Louise Grondin (born 1684, also in France) and his descendants raised families in the next 300+ years around Kamouraska and Rimouski. My great-grandfather Louis Noe Albert and my grandfather Armand Albert, however, set up their medical practices in the heart of the Acadian-settled region of Madawaska that abuts the border of Maine and New Brunswick, so many Alberts born and raised there - like my father - were from that branch of the family, with those lines of lineage. I have met a few third and fourth cousins whose arriere-grandparents from my same ancestors moved to New Brunswick much earlier than mine. I also understand that the original Pierre Albert had brothers who came from France about the time he did, and I believe they established their families in the Acadian-settled parts of New Brunswick much earlier.

According to Fidèle Thériault in "Les familles de Caraquet", the origins of the Albert ancestor in Caraquet are uncertain, but are likely to have been Gabriel Albert. It is thought that he was part of a group of fishermen who would come from Pabos, Quebec, to fish in the Baie des Chaleurs. Eventually, he decided to stay. In 1784 he received 400 acres of land in the Caraquet area as part of the "Grande Grant" <http://mwlandry.ca/grande_grant.htm>.
