There is another William Merriott who was born in and lived in Morgan County, Missouri who married Matilda J. Staples. It appears there may be some conflation with this William who was born in Hardin County, Kentucky. I'll search out some more sources to see if we can unravel the connections. -- Fiscus-32 20:04, 24 February 2020 (UTC)
In 1860, William Joseph is in Dallas, Texas living with his parents, and he's using the name Joseph instead of William. By the 1870 Census, we find a J.W. Merriot [sic] living in Dallas, Texas in the household of Andrew Buetle, b. ca. 1830 in Kentucky. Andrew appears to be William Joseph's uncle (brother of his mother). Also in the household is Eliza Buetle, b. ca. 1800 in Maryland, William Joseph's maternal grandmother.[1] -- Fiscus-32 05:02, 25 February 2020 (UTC)
I have searched for both "William Marriott" and "Joseph Marriott" b. in Kentucky ca. 1840-1850 in the 1880 Census. I've checked for locations in Texas and outside of Texas, but I've been unable to find him listed. The original date of death on this profile was 1892, but there was no mention of that on his Find-a-Grave memorial, and no other source to explain where that date came from. I've removed it for now. Is it possible that he died prior to 1880? -- Fiscus-32 03:15, 26 February 2020 (UTC)
His Find-a-Grave memorial shows his grave marker in Saint Paul Catholic Cemetery in Saint Paul, Collin County, Texas; however, the marker is broken and no dates are readable. It does indicate that he is the son of W.E. and Ellen Marriott.[2] Can we assume from the location of his burial that he was living in Texas when he died? -- Fiscus-32 21:56, 25 February 2020 (UTC)

DNA Connections
It may be possible to confirm family relationships with Joseph by comparing test results with other carriers of his ancestors' Y-chromosome or mitochondrial DNA.
However, there are no known yDNA or mtDNA test-takers in his direct paternal or maternal line.
It is likely that these autosomal DNA test-takers will share some percentage of DNA with Joseph:
There was another William Merriott (sometimes spelled "Marriott") who was born and lived in Morgan County, Missouri. I believe you may have picked up some information about him for this profile.
This William was born in Kentucky. I'll see if I can find other records that fit with the parents you have connected.
In the meantime, I'm going to remove his date of death, and I do believe that Matilda J. Staples was married to the William who lived in Morgan County, Missouri, as that is where their marriage record was recorded. See: https://www.familysearch.org/ark:/61903/1:1:WBQ2-PKMM
